Steven Raichlen Says of Stepson Jake Klein,
Chef of Pulse Restaurant, His Food Has
Edge, Cool, and Originality
Jake
Klein serves up grilled food, stick food
and authentic modern Japanese food-clean,
sophisticated fare that satisfies.
He and his restaurant Pulse, are hidden
treasures of NYC.
New York, New York (January
2, 2007). "The gavel has been passed!
My stepson Jake has transcended BBQ. Jake
and I traveled extensively together in
the Far East and just when I thought he
wasn't paying attention, his cooking acquired
this incredible Asian sensibility (with
a tropical touch of his native Miami).
His food at Pulse has edge, cool, and
irrepressible originality. There's no
place else I'd rather eat." Steven
Raichlen Author, TV host, and Jake's step-father.
The restaurant where Jake Klein is the
executive chef used to be only for the
privileged few. Now everyone can taste
what makes Jake Klein the favorite of
Japanese professionals and Japanese restaurateurs,
as well as the favorite of media professionals
who like to stay slim? and out of the
public eye when they're having very serious
power lunches.
Pulse is the restaurant inside Sports
Club LA, the premier sports facility in
New York. Like its sister clubs in Los
Angeles, there is a café, bar and
fine-dining restaurant inside the club.
But unlike the Los Angeles clubs, New
Yorkers demand more than sprouts and salads
for lunch and dinner. And that's where
Jake Klein has proven that food that is
clean, and sophisticated food that is
essentially good for you can taste every
bit as delicious as food that has lots
more fat, and lots more calories in lots
bigger portions.
Klein's unique style combines his love
of grilling, and his knowledge of how
it's used worldwide, with his ability
to master Japanese cooking and techniques.
Jake's grilling expertise began in his
childhood, when he began to apprentice
his step-father, Steven Raichlen, author
and Dean of Barbecue University, the television
series seen on PBS. By using sticks-in
the yakitori style-Jake serves food that
is portion-controlled, without being "little
plates." If you understand that an
Asian diet-rich in fish and light in bread
(none on the table at Pulse!!) and added
oils, cooked either on a grill, or lightly
sautéed is wildly healthy-you understand
that this is beyond the old-fashioned
"spa" cuisine. Jake's cuisine
is "clean", and his meals are
elegant, sophisticated, satisfying, brilliantly
prepared and presented and yes, fabulous.
From signature dishes such as steamed
wild mushroom dumplings, the main course
short ribs (on a stick of course-you must
see and taste these!), the incredible
chicken dumplings known as tsekune, also
served on a stick, and, the favorite of
the Lazard Hedge fund mangers: diver scallops
with coconut polenta, to new menu additions
such as lamb buns (the favorite of one
network television journalist-just ask
and we'll tell you who!), Jake Klein provides
what just may be some of the most delicious
fare in all of NYC?and though you wouldn't
know it, it's food that is good for you.
And even better, it's all served in a
setting that's delightful-with a third
floor view of the Rockefeller Center skating
rink-and in season, the TREE-- that rivals
the best views in all of NYC.
All this in a place you probably didn't
know existed, with food you will marvel
about, and return for again and again.
Pulse is at 45 Rockefeller Plaza. "Despite
the concealed location on the third floor
of the Sports Club LA at Rockefeller Center,
overlooking the skating rink, there's
no members-only policy. Just a health-conscious
selection of delectable dishes".
